Ingredients
- 230 g whole-grain spelt flour
- 110 g Butter
- 70 g powdered sugar
- 1 tbsp milk or water
- 1 tsp lemon or orange juice
- 1/2 tsp baking powder
Preparation

Pour the flour onto the work surface, add the baking powder, and mix well.

Sift the powdered sugar into the flour mixture and mix well.

Cut the cold butter into cubes, add it, and crumble it a little.

Make a well and add the egg, milk or water, and lemon or orange juice.

Quickly knead everything together into a smooth dough and let it rest in the refrigerator for at least ½ hour.

Roll out the dough on a floured work surface and cut out shapes. Make sure that both the rolling pin and the work surface are sufficiently floured so that the dough doesn't stick and tear.

Place the cut-out cookies on a baking sheet lined with parchment paper. Depending on the thickness of the cookies, bake them for 5 to 10 minutes at 200 °C (top and bottom heat) in a preheated oven.

Once they've cooled, you can decorate the cookies however you like, fill them with red currant jam, for example, or just enjoy them as is.
Tip:
For cookies that will be filled with jam, roll out the dough thinly
(about 2 mm) and evenly!
